Kay and I took a couple of days out from our visit with Alyssa and Bill last weekend to run up to Vancouver to visit with Evan and Janice. We borrowed Bill's pickup truck and enjoyed a beautiful sky and snow-covered mountains on the drive. On Monday, even though Evan had put in a very solid 18 hole game of golf he took time with me in the afternoon to go through listening to a recording with the music scores of the upcoming Vancouver Cantata Singers Baltic concert he is preparing for early May. While that was going on, a chicken-polenta dish was baking in the oven for supper. I enjoyed helping a bit with the chicken as Evan expertly put together the various ingredients of the polenta upon which the chicken was baked. The result was succulent. The polenta was made with corn meal stirred into a chicken broth and cream mixture full of diced vegetables. I hope to replicate it soon, but may experiment with a substitution for the pint of cream in the hope of not losing too much of the most satisfying richness we experienced in the combination.
